Gooey Marshmallow Cookies

DESCRIPTION

Behold the gooiest yummiest cookie you will ever eat! We’ve added our Belgian chocolate coated Vanilla marshmallow to this classic American cookie mixture, creating delicious pools of marshmallowy goodness you can savour with every bite. Feel free to substitute with your favourite Mallow & Marsh flavour – any combination is delicious!

 

INGREDIENTS

225g of soft, unsalted butter
40g caster sugar
170g muscovado sugar
270g self-raising flour
1tsp vanilla extract
Pinch of salt
2 large free-range eggs
1 pouch of Vanilla Mallow & Marsh marshmallow (or any flavour you like!)

 

METHOD

  1. Preheat the oven to 180c
  2. Whisk the butter in a large mixing bowl for a few minutes until light and fluffy
  3. Mix in the caster & muscovado sugar and vanilla extract
  4. Sift the self-raising flour and fold in the mixture until fully incorporated
  5. Crack both eggs into the mixture and add a pinch of salt
  6. Mix well until the mixture is smooth with no lumps
  7. Chop the marshmallow into cubes into quarters and set aside
  8. Line a tray with baking parchment and scoop a tablespoon of the mixture onto the paper, ensuring you leave large gaps between each dollop
  9. Top each scoop of cookie dough with marshmallow
  10. Bake for 10-12 minutes until browned, then remove from the oven and leave to cool on a baking tray
  11. Eat & enjoy!
