Mallow & Marsh’s Rocky Road Recipe


A classic childhood favourite, nothing says comfort food like a big chunk of Rocky Road and a cup of tea! We’ve kept our recipe super simple, but feel free to add up to 60g of anything you like to the mixture – nuts, dried fruit, cereal – you name it! There are no rules here (except the 60g rule, otherwise it’s gonna be a mess…)


(Makes 12 bars)
180g digestive biscuits
135g butter
200g good quality milk or dark chocolate
3 tbsp golden syrup
1 pouch of Mallow & Marsh Chocolate marshmallow (feel free to sub with another flavour!)


  1. Crush the digestive biscuits in a bowl until broken into small chunks with a rolling pin
  2. Melt the butter, chocolate & golden syrup in a saucepan on a low heat and whisk until fully incorporated into a smooth, silky heavenly chocolate mixture and leave aside to cool slightly
  3. Chop the marshmallow into halves and mix into the chocolate mixture with the digestive biscuits
  4. Stir the mixture until the biscuits & marshmallow are evenly mixed and pour out into a baking tray lined with baking parchment
  5. Using a potato masher or spatula, flatten the mixture until evenly spread out
  6. Pop the tray into the fridge for at least two hours to set
  7. Using a large knife, cut into squares and enjoy!
